Cooked it yesterday – we have spent the weekend at Etna and collectedsome fresh chestnust in the forrest there. I made it with a few small adjustments (substituted star anice with a little bit of Chinese 5 spice mix that I’ve made some time ago). It all came out delicious and I’m very excited that I will also have some leftovers for lunch today!

The chestnut doesn’t’ really add flavors to the dish and it is here more for texture. You can skip the chestnut if you cannot find them. Sometimes I also use mushrooms and it is super tasty.

Loved this recipe and it was delcious. The only thing I found confusing is that it requires 3 Tb of light soy sauce and 1 of dark soy sauce, but reading the directions, it tells you when to add the dark soy sauce but doesn’t mention when to add the light one.

You can definitely cut the thighs into halves. That will help the flavor soaking in. I’ve cooked with whole thighs in the past and the result was not bad. But I personally prefer the smaller cut so you can get a more flavorful meat.
